Cooking 2012

I started out the year planning to cook, over the New Year's weekend, enough food to last throughout the month. In all actuality, the food cooked will probably last well into the first half of February. Below are the items that I cooked and the approximate number of servings prepared.

December 31st: (New Year's Eve)
Beef Stew - 9 servings
Beef Chili - 12 servings
Granny's Vegetarian Chili -11 servings
BBQ Chicken -2 servings (the rest eaten for dinner)
Caribbean Jerk Chicken - 8 servings
Crock Pot Jambalaya (Shrimp, Chicken & Sausage Combo) - 6 servings
Shrimp Etouffee - 8 servings

January 1st:
Orange Honey Tofu - 6 servings
Crock Pot Mongolian Beef - 4 servings
Chicken Zucchini Ziti (Added chicken) - 8 servings

January 4th:
Skinny Rosemary Potato Soup - 9 servings
Skinny Broccoli Cheddar Soup - 8 servings
Taco Meat - 8 two person servings
Shrimp & Pork Won Ton (meat filling mixed) - 6 servings
Swedish Meatballs (meat mixed) - 6 servings

That's over 100 servings of food already prepared, just needing reheating and quick side dishes (rice/potatoes/pasta) and/or veggies.
